Some years ago I used to bake. I even had a side hustle where I sold brownies. But my first son was born and being a new mom took all of my time. Also, baking for clients is not the same as baking for yourself. The “stress” factor that involves selling, plus the fails that sometimes occur (yes, sometimes I had to repeat a batch once or twice), and the little time I had left made me leave aside cooking and baking. But this year, during quarantine, the baking bug came out and I decided to give it another chance.
First, I started with a banana cake. It tasted really good but the consistency wasn’t: it turned out with dense parts. I then made some cheese muffins and also had the same result. Finally I went back to the basics and made this easy vanilla cupcakes recipe and BINGO!: they turned out perfect. Perfect taste and perfect consistency.
My daughter turns 2 next week and I want to make them for her little quarantine celebration. I needed to practice a little more so I did the vanilla cupcake recipe again and they were just great.
Try it yourself and let me know how it goes.
INGREDIENTS (for 12-13 cupcakes)
- 1/2 cup of milk
- 1/2 cup of butter (approximately 120 grams)
- 1 cup of sugar
- 1.5 cups of sifted flour
- 2 eggs
- 1.5 teaspoons of baking powder
- 1 teaspoon of vanilla extract
INSTRUCTIONS
- Mix with a mixer in a bowl the butter until it’s creamy.
- Add the sugar and mix well.
- Add the eggs and mix well.
- Add the sifted flour and the baking powder alternating with the milk.
- Add 1/3 of the flour and baking powder and mix.
- Then add 1/2 de milk and mix
- Add 1/3 of flour and baking powder and mix
- Then add the rest of the milk and mix
- Add the rest of the flour and baking powder and mix.
- Finally add the vanilla extract and mix.
- Scrape down the sides of the bowl as needed.
- Line your cupcake mold and fill each cup to about 2/3 with the batter.
- Bake at 200ºC for around 15-17 minutes.
To know when they are done insert a toothpick to a cupcake. If it comes out clean then they are done.
You can enjoy them as a daily dessert and they are also amazing for a birthday party or baby shower. To embellish them you can make a buttercream frosting. Also, you can use a cupcake wrapper and a cupcake topper with the colors or theme of the party to match the party decoration.
